Organic means more than grown without synthetic pesticides and fertilizers.
Certified Organic is the industry standard (and now law) to ensure that
organic standards are met and maintained. We are certified organic by
Quality Assurance Intenational.

QAI
regularly sends inspectors down to the farms to ensure that rigid
quality control standards for organic production are met. A paper
trail follows the coffee up to our roasting facility where we in
turn are inspected to account for each and every bean we buy and
sell. By the way, our facility is 100% organic! |
Organic
Coffee farmers use compost fertilizer made from the mulch of coffee
cherries, cattle manure, and residues from inter-planted crops (banana,
sugarcane, and cocoa among others) to produce a deep, rich level of
topsoil for their trees. The topsoil gives the coffee plant essential
nutrients which provides you with a richer, fuller, and bigger taste.

As
an alternative to pesticides, organic farmers set traps, introduce
rival species (birds are great!), and literally pour over their
trees by hand to remove unwanted pests. |

THE
FARMERS
Jim's
experience allows us to work with suppliers to obtain the highest quality
coffees and, in doing so, facilitate partnerships that ensure growers
receive ample return for their goods. We
buy from small family owned plots, from peoples indigenous to their regions,
and from co-operatively owned farms where revenue, along with tools, mills,
mulches, and organic methods are shared collectively. The premium we pay
for their best coffees goes into sustaining organic farming principles,
rewarding farmers for their higher quality coffee, and helping to support
their families and communities.

SHADE
GROWN
Successful
(which in my mind is best tasting) organic coffee farming is shade grown.
Shade trees such as banana, plantains, mahogany, and other leguminous
trees provide a canopy for the coffee tree. This canopy prevents the sun
from bleaching nutrients from the topsoil. Shade trees also provide valuable
inter-planting on the farm which deters pests and prevents topsoil depletion.

canopy also provides a home to our friends in the bird kingdom.
Northern Waterthrush, Slate Throuted and Painted Redstarts, and
many types of Warblers; among others, call can be found on organic
shade coffee plantations around the world. |

of this is of any value if it doesn't taste great. That's where experience
comes in. Jim personally selects all of our coffee. Our roasting is
done using a long, hand roasting methods specifically designed by Jim
to extract maximum excitement out of each organic bean we choose. Then,
we vacuum package our coffee to maintain its roaster freshness. Our
whole focus is on delivering the highest quality we can. We work hard
at it and we think it comes through in the cup. We enjoy our coffee
and we are sure you will too.
