Guatemalan Lake Atitlan Tzanchaj

Guatemalan Lake Atitlan Tzanchaj

Roast: Medium

Flavor Notes:

Big, balanced taste with complex chocolate and berry notes. The group we buy from is called AAPOSA. With approximately 140 farmers, they are one of the smaller growing groups in the Santiago Atitlan area. Their commitment to organic is complete. When Roya (a coffee fungus) plagued coffee throughout Central America, many farms were forced to spray fungicides and lose their organic certification. But not AAPOSA; to combat the rust, the farmers pruned their shade trees to allow the proper balance of sun and shade and greatly reduce the Roya.

JIM's notes...

Guatemala holds a particular place in my heart because of the work we have done there with our partner Child Aid to the school in Tzanchaj- just down the slopes from where our coffee is grown. I've been there three times, the last time with my oldest daughter. I like to describe this coffee as black forest cake. Dark chocolate, milk chocolate, cherry. Our ‘full city’ roast highlights these tastes.
