When I first began teaching myself specialty coffee back in the late 1980’s, one of the more memorable and distinct flavor notes I tasted was lemon. Roasting on a small popcorn popper roaster and preparing coffee camp style (most similar to formal cupping), I can still remember the distinct note of lemon coming through in Ethiopian Sidamo’s. So while great Ethiopian coffee runs the gamut of taste profiles, it is lemon we seek.
