JIM's notes...
This Limited Edition organic coffee is grown in the small village of Bombe in the Bensa district of Sidama, Ethiopia. Bombe is home to some of the highest elevation farms in all of Sidama. Here, farmers live as they have for generations, on small farms high up in the mountains. These “garden farms” are often just 7-9 acres and sit behind the farmers’ homes.
At these elevations, cooler temperatures and improved water drainage help slow the coffee plant’s growth, allowing it to mature slowly. This produces a denser bean that has a more complex flavor profile.
Farmers in this region use the traditional harvest practice of selective picking. This is the process of choosing only ripe red cherries, resulting in a higher quality cup.
