Jim’s Organic Coffee‘s first limited-edition coffee of 2026 is Honduras Gea: a regional blend sourced from an organic coffee co-op of more than 400 women producers across several cooperatives in Honduras.

Inspired by Gea, the Greek goddess of Earth and the mother of all creation, the name reflects not only the producers’ deep connection with the land but also their unwavering spirit —balancing daily life with coffee cultivation.

Their dedication to organic and sustainable farming is evident, as they tend to each coffee plant by hand and with care. Alongside coffee, they also cultivate timber and fruit trees, creating a shaded and biodiverse environment that helps retain soil moisture and enhances the complexity and quality of each cup. The result is a bright and vibrant coffee, with notes of green apple and toffee, complemented by a juicy acidity. Each sip reflects the strength, care and knowledge of the women who produced it.
